Cooking with honey

Cecilie is a dedicated beekeeper with a strong commitment to nature's diversity and environmental conservation.

She advocates for reconnecting with nature through regenerative practices, emphasizing the Earth's abundant capacity to provide for all. Cecilie has also pursued studies in regenerative agriculture, deepening her understanding of sustainable farming practices.

With a background in medicine, Cecilie spent several years in Italy, where she discovered the vast diversity of honey. Later, she specialized in honey sensory analysis and embraced the principles of the Slow Food movement. She continues her education in Bologna, Italy, to further enhance her expertise in apiculture.

Cecilie has been a judge at the Norwegian Honey Championship (NM i Honning) for many years, where nearly 200 honey samples are assessed each year. She also serves as a judge for Norway's Best Beverage. Additionally, Cecilie lectures on honey sensory analysis, sharing her knowledge and passion for high-quality, sustainable honey..

In Norway, Cecilie operates a small apiary using Lonin hives, a beehive design that offers a more natural living environment for bees.
